The kidney bean is a large, sturdy deep red bean that is, of course, shaped like a kidney. This bean is best known for its rich flavour and colour, and is often employed in chili, as well as soups, dips, and over rice.

Directions
Rinse 1 cup beans. Pour into boiling water and cover. Soak at least 6 hours. Drain and discard soaking water. Add 4 cups fresh water and boil for 10 minutes, then simmer over low heat until tender, approximately 1-1 1/2 hours.

Storage
When stored in a cool (preferably less than 60˚F) and dry location (less than 65% humidity), shelf life is approximately 2 years.
