Description
Navy beans are small, pea-sized beans that are creamy-white in colour. They are dense and have a mild flavour.

Directions
Rinse 1 cup beans. Pour into boiling water and cover. Soak overnight, at least 6 hours. Drain and discard soaking water. Add 4 cups fresh water & simmer over low heat until tender, approximately 45 minutes to 1 hour.

Uses
Navy beans are especially popular in France and Anglo-America, appearing in such traditional dishes as baked beans, as well as soups (especially minestrone) and chili. They are closely related to the kidney bean and can also be substituted for Great Northern, Baby Lima beans, or Cannellini beans in many recipes.

Storage
When stored in a cool and dry location, shelf life is approximately 2 years.
