Description
Blackeye beans are small (about the size of a pea) and are cream coloured with a jet black spot. They have a mild, sweet, earthy taste and a soft texture.

Directions
Blackeye beans do not need to be soaked overnight. Rinse 1 cup beans and combine in a saucepan with 4 cups water. Simmer over low heat until tender, for approximately 1 hour.

Storage
When stored in a cool (preferably less than 60˚F) and dry location (less than 65% humidity), shelf life is approximately 2 years.
