Ever wondered how you can maximize your nutrition without breaking the bank? With the fast-paced world we live in, the cost of living has grown tremendously and has impacted the prices of products and services. When it comes to maintaining a healthy diet, it can be challenging to have the proper nutrition. However, with a little planning and a few tips & tricks, you can make positive habits and enjoy the benefits of a well-maintained lifestyle.

Step #1: Create a meal plan.

An efficient way to structure your budget and meals is to create a meal plan. The plan can be for the week, two weeks, or even a month. But, it may be easier to think of a few meals for the week as supposed to the entire 30 days.

You can base your meals off of what you already have in the fridge or find inspiration from online. From there, seek what you’ll need from the store. Perhaps a couple spices or vegetables, however, recipes don’t need to be limited to what they mention. Experiment and expand your taste pallet to whichever ingredient you prefer or already have.

Step #2: Finalize your grocery list.

After you’ve made a list of your necessary ingredients, check to see if any of your local stores are carrying deals/promos. If not, depending on your necessities, they often carry bulk and store brands for your cooking ingredients, spices, herbs, and confections. Buying bulk and purchasing store brands for the ingredients you often use is best practice to being cost-efficient.

Step #3: Preparation is the key to your succession.

So now that you’ve organized your ideas and have gathered your ingredients, you can finally prepare for the meal plan’s duration. Whether you need to cook or not, storing your prepared meals into containers can help with your fridge’s organization but also, saves you time in your day. Just remember the shelf life of your meals and ingredient so your hard work doesn’t go to waste.

Tips & Tricks:

  • If you have leftovers, try making “Garbage Soup”. The perfect dish made from your scraps in your pantry and fridge. The foundation of the soup is with any broth of your choice and throwing vegetables, meats, spices, etc. to your desired taste.
  • Try planning your meals with seasonal vegetables and fruit, they are cheaper in stores when they are in season.
  • Beans can be added to any recipe for some added nutrients. Dried beans can be more cost-efficient and all you have to do is soak them in water before cooking them.
  • Tired of rice or pasta? Try adding different grains to your dishes. For example, quinoa- it is packed with nutrition like iron and magnesium!

Prep Time: 5 min

Cook Time: 25

Westpoint Ingredients

  • 4 cups of Organic Long Grain Brown Rice

Other Ingredients

  • 1 lb. ground turkey or beef
  • Taco Seasoning
  • 1 cup frozen corn kernels
  • 1 15oz. can black beans
  • 4 oz. cheese
  • 1 1/3 cup salsa
  • 2 green onions

Method

1) Cook the rice first. You will be able to prepare all the rest of the ingredients as the rice cooks. Cook the rice according to the package directions. To yield about 4 cups white rice, I use 1.5 cups uncooked rice and 2.5 cups water, but this may vary depending on your rice variety, so be sure to check the package.
2) While the rice is cooking, add the ground turkey or beef to a skillet and cook over medium heat until it is cooked through. Depending on the fat content of your meat, you may need to add a little oil to the skillet to keep it from sticking.
3) Once the meat is fully cooked, add the taco seasoning and 1/2 cup water. Stir and simmer the meat and spices until the water reduces to a saucy consistency (about 5 minutes). Turn the heat off and set the meat aside.
4) Thaw the corn kernels, rinse and drain the black beans, shred the cheese, and slice the green onions.
5) Once the rice is finished, fluff it with a fork and divide it between four containers. Divide the remaining six bowl ingredients between the containers as well (taco meat, corn, beans, cheese, salsa, and green onions).
6) Reheat the bowls for 1-2 minutes before eating to melt the cheese and heat the meat and rice through.
