Description
Elderberry is a dark purple fruit of the Sambucus tree. Evidence of Elderberry plants has been uncovered in many Stone Age Sites! Various parts of the Elderberry tree have been used throughout history for medicinal and culinary purposes. It is still gathered and used in folk medicine across many parts of Europe.

Directions
Elderberry Syrup
- ½ Cup dried Elderberries
- 2 Cups water
- ¼ Teaspoon Ground Cloves
- 1 Teaspoon Ground Cinnamon
- 2 Teaspoons Ground Ginger
- ½ Cup Honey
Instructions:
1. Combine the Elderberries, water, Ground Cinnamon Ground Cloves, and Ground Ginger in a small pot over high heat. Bring mixture to a boil. Lower the heat and simmer the mixture until reduced by half.
2. Strain the mixture into a clean bowl. Allow the juice to cool to room temperature. Once the mixture has cooled, whisk in Honey and store in a sealed glass jar. The mixture should last up to 4 weeks in the refrigerator. -
Uses
Elderberries are quite tart and need to be cooked down to be palatable.
- Make a sweet or savoury Jam or chutney to pair with sweet and savoury dishes alike
- Fresh Elder Berry can be cooked down into a pie
- Try making a concentrated syrup for cocktails, juices and other drinks
