Description
Great Northern beans are ivory-white ovals, slightly kidney shaped and with a tough skin. They are about twice the size of navy beans and black-eyed peas. Great Northern beans resemble the lima bean in shape, but have a delicate, distinctive flavour and a powdery, cake-y texture.

Directions
Rinse 1 cup beans. Pour into boiling water and cover. Soak overnight, at least 6 hours. Drain and discard soaking water. Add 4 cups fresh water and simmer over low heat until tender, approximately 2-2 1/2 hours.

Uses
Great Northern beans are ideal for blending into a smooth paste for soups or sauces. Substitute for other mild, white legumes such as cannellini or navy beans. Great Northern beans can also be used to make baked beans. Their tough skin allows them to keep their shape even during slow, long cooking.

Storage
When stored in a cool (preferably less than 60˚F) and dry location (less than 65% humidity), shelf life is approximately 2 years.
